2 pounds goat meat (cut into bite-sized pieces)
2 onions (finely chopped)
4 cloves of garlic (minced)
2 tablespoons Jamaican curry powder
1 teaspoon ground allspice
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons vegetable oil
2 cups water or beef broth
2 sprigs thyme
2 scallions (chopped)
Salt and black pepper to taste
In a bowl, combine the curry powder, allspice, turmeric, cumin, and coriander. Mix well to create a spice rub.
Season the goat meat with salt and black pepper, then rub the spice mixture all over the meat, ensuring it's evenly coated.
Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the onions and garlic, and sauté until fragrant and translucent.
Add the seasoned goat meat to the pot and brown it on all sides.
Pour in the water or beef broth and add the thyme and scallions. Stir well.
Reduce the heat to low, cover the pot, and simmer for about 2-3 hours or until the meat is tender, stirring occasionally.
Taste and adjust the seasoning with salt and pepper if needed.
Serve hot with rice, roti, or Jamaican hard dough bread.
