Oxtail Stew Recipe.


Ingredients:


3 pounds oxtail
2 tablespoons vegetable oil
2 onions (chopped)
4 cloves of garlic (minced)
2 carrots (peeled and sliced)
2 celery stalks (chopped)
2 bell peppers (chopped)
2 tablespoons tomato paste
4 cups beef broth
2 cups water
2 sprigs thyme
2 bay leaves
1 teaspoon paprika
1 teaspoon ground allspice
1/2 teaspoon ground nutmeg
Salt and black pepper to taste
Fresh parsley (chopped, for garnish)


Recipe Instructions:


Heat the vegetable oil in a large pot or Dutch oven over medium heat.
Add the oxtail to the pot and brown it on all sides. Remove the oxtail from the pot and set it aside.
In the same pot, add the onions, garlic, carrots, celery, and bell peppers. Sauté until the vegetables are softened and aromatic.
Stir in the tomato paste and cook for an additional 2 minutes.
Return the oxtail to the pot and pour in the beef broth and water. Stir well to combine all the ingredients.
Add the thyme, bay leaves, paprika, allspice, nutmeg, salt, and black pepper. Stir again.
Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 3-4 hours or until the oxtail is tender and falls off the bone, stirring occasionally.
Once the stew has thickened and the oxtail is tender, remove the thyme sprigs and bay leaves.
Taste and adjust the seasoning if necessary.
Serve the oxtail stew hot, garnished with fresh parsley. It pairs well with rice and peas, mashed potatoes, or Jamaican hard dough bread.
