Escovitch Fish Recipe.


Ingredients:


2 whole fish (such as snapper or tilapia), scaled and cleaned
1 cup all-purpose flour
1 teaspoon paprika
Salt and black pepper to taste
Vegetable oil, for frying
2 onions, thinly sliced
1 bell pepper, thinly sliced
2 carrots, julienned
2 scotch bonnet peppers, thinly sliced (seeds removed for less heat)
1 cup white vinegar
1 tablespoon sugar
1 teaspoon whole allspice berries
2 sprigs fresh thyme
Fresh parsley or cilantro, for garnish


Recipe Instructions:


In a shallow dish, mix the flour, paprika, salt, and black pepper. Dredge the fish in the seasoned flour, shaking off any excess.
Heat vegetable oil in a frying pan over medium-high heat. Fry the fish until golden brown and crispy on both sides. Remove from the pan and drain on paper towels to remove excess oil.
In a separate saucepan, combine the onions, bell pepper, carrots, scotch bonnet peppers, white vinegar, sugar, allspice berries, and thyme. Bring the mixture to a boil, then reduce the heat and simmer for about 5 minutes until the vegetables are slightly tender.
Place the fried fish in a shallow dish or platter and pour the hot vinegar mixture over it, ensuring the fish is completely covered. Let it marinate for at least 30 minutes to allow the flavors to meld together.
Garnish with fresh parsley or cilantro before serving.
Escovitch fish is traditionally served with festival bread or boiled dumplings and a side of pickled vegetables like carrots and onions.
