2 pounds whole fish (such as snapper or grouper), cleaned and scaled
2 tablespoons vegetable oil
1 onion, sliced
2 cloves of garlic, minced
1 bell pepper, sliced
2 tomatoes, chopped
2 scallions, chopped
1 scotch bonnet pepper (whole or sliced, adjust to taste)
1 sprig of fresh thyme
Juice of 2 limes
1 cup fish or vegetable broth
Salt and black pepper to taste
Fresh cilantro or parsley, for garnish
Steamed white rice, for serving
Rinse the fish thoroughly and pat it dry with paper towels. Make a few shallow diagonal cuts on both sides of the fish to help it cook evenly and absorb the flavors.
Heat the vegetable oil in a large skillet or steamer pot over medium heat.
Add the onion, garlic, bell pepper, tomatoes, scallions, scotch bonnet pepper, and thyme to the skillet. Sauté until the vegetables soften and become fragrant.
Place the fish on top of the sautéed vegetables in the skillet.
Pour the lime juice and fish or vegetable broth over the fish. Season with salt and black pepper to taste.
Cover the skillet tightly with a lid or aluminum foil, and let the fish steam over medium-low heat for about 15-20 minutes, or until the flesh is opaque and flakes easily with a fork.
Remove the skillet from heat and carefully transfer the fish to a serving platter.
Garnish with fresh cilantro or parsley.
