1 kg oxtail, cut into pieces
1 cup peanut butter
2 tablespoons annatto seeds
2 tablespoons cooking oil
4 cloves garlic, minced
1 medium onion, chopped
4 cups water
1 bunch bok choy, blanched
Salt and pepper to taste
In a large pot, boil oxtail in water until tender. Remove from pot and set aside.
In a separate pan, heat oil over medium heat. Sauté garlic and onions until aromatic.
Add annatto seeds to the pan and cook for a minute or until the oil turns red.
Remove the annatto seeds from the pan and discard.
Add the oxtail to the pan and cook for a few minutes, stirring constantly.
Add water and simmer for 1 hour or until the oxtail is very tender.
Stir in peanut butter and continue cooking for 10 minutes.
Season with salt and pepper to taste.
Serve hot with blanched bok choy and steamed rice.
