500 grams beef sirloin or tenderloin, thinly sliced
1/4 cup soy sauce
1/4 cup calamansi juice (or lemon juice as a substitute)
4 cloves garlic, minced
1 large onion, thinly sliced into rings
1 tablespoon cooking oil
Salt and pepper, to taste
Optional: 1 tablespoon cornstarch (for thickening the sauce)
Optional: Sliced green onions or chopped parsley for garnish
In a bowl, combine soy sauce, calamansi juice, minced garlic, salt, and pepper. Mix well to create the marinade.
Place the thinly sliced beef in the marinade, ensuring that each piece is coated. Let it marinate for at least 30 minutes to allow the flavors to penetrate the meat.
Heat cooking oil in a large pan over medium-high heat.
Remove the beef from the marinade, reserving the marinade for later use.
Sear the beef slices in the hot pan for about 1-2 minutes on each side until browned. Cook in batches if necessary to avoid overcrowding the pan.
Once the beef is cooked, transfer it to a plate and set it aside.
In the same pan, add the sliced onions and sauté until they become translucent and caramelized.
Pour the reserved marinade into the pan and bring it to a simmer.
If desired, you can thicken the sauce by dissolving cornstarch in a small amount of water, then adding it to the pan. Stir continuously until the sauce thickens.
Return the beef to the pan, coating it with the sauce. Cook for an additional 1-2 minutes to let the flavors meld together.
Remove from heat and transfer the Bistek Tagalog to a serving platter.
Garnish with sliced green onions or chopped parsley for added freshness and presentation.
