Pinakbet Recipe.


Ingredients:


2 tablespoons cooking oil
4 cloves garlic, minced
1 onion, sliced
2 tomatoes, sliced
1 bitter melon (ampalaya), seeds removed and sliced
1 eggplant, sliced
1 squash (calabaza), peeled and cubed
1 yard-long beans (sitaw), cut into 2-inch pieces
1 cup okra, ends trimmed
1 cup water
2 tablespoons shrimp paste (bagoong)
Salt and pepper, to taste


Recipe Instructions:


Heat cooking oil in a large pan or wok over medium heat.
Sauté minced garlic until golden brown and fragrant.
Add sliced onions and cook until they become translucent.
Add sliced tomatoes to the pan and cook until they soften and release their juices.
Stir in the bitter melon (ampalaya), eggplant, squash, yard-long beans (sitaw), and okra. Mix well to combine the vegetables.
Pour water into the pan, cover, and let the vegetables simmer for about 10 minutes or until they become tender.
Add shrimp paste (bagoong) to the pan and mix it with the vegetables. Adjust the amount of shrimp paste according to your taste preferences.
Season with salt and pepper to taste. Remember that shrimp paste can be salty, so taste the dish before adding additional salt.
Continue to simmer for another 5 minutes, allowing the flavors to meld together.
Once the vegetables are cooked and the flavors are well-incorporated, remove the pan from heat.
Transfer the Pinakbet to a serving dish and serve hot with steamed rice.
