Ginataang Manok (Chicken in Coconut Milk) Recipe.


Ingredients:


1 kg chicken, cut into serving pieces
2 tablespoons cooking oil
4 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, peeled and sliced
2 cups coconut milk
1 cup chicken broth
1 cup squash (calabaza), peeled and cubed
1 cup green beans, trimmed and cut into 2-inch pieces
1 cup bell peppers, sliced
1 cup spinach or kangkong (water spinach), leaves and tender stems
2 tablespoons fish sauce (patis)
Salt and pepper, to taste


Recipe Instructions:


Heat cooking oil in a large pot or deep pan over medium heat.
Sauté minced garlic, chopped onion, and sliced ginger until fragrant and lightly golden.
Add the chicken pieces to the pot and cook until lightly browned on all sides.
Pour in the coconut milk and chicken broth. Stir well to combine.
Bring the mixture to a simmer and cover the pot. Let the chicken cook for about 30 minutes or until it becomes tender and fully cooked.
Add the cubed squash (calabaza) to the pot and simmer for another 5 minutes or until the squash starts to soften.
Stir in the green beans and bell peppers. Continue to simmer for about 5 minutes until the vegetables are cooked but still retain their crispness.
Season with fish sauce (patis), salt, and pepper. Adjust the seasoning according to your taste preferences.
Add the spinach or kangkong (water spinach) to the pot and cook for another 2 minutes until wilted.
Once the chicken is tender, the vegetables are cooked, and the flavors are well-incorporated, remove the pot from heat.
