500 grams pork shoulder or pork belly, cut into small cubes
2 tablespoons cooking oil
3 cloves garlic, minced
1 onion, chopped
2 tomatoes, chopped
1 red bell pepper, diced
1 green bell pepper, diced
1 cup carrots, diced
1 cup potatoes, diced
1/2 cup green peas
1/2 cup raisins
1/4 cup tomato sauce
1 cup pork broth or water
2 tablespoons soy sauce
1 tablespoon liver spread (optional)
1 bay leaf
Salt and pepper, to taste
Heat cooking oil in a large pot or deep pan over medium heat.
Sauté minced garlic and chopped onion until fragrant and translucent.
Add the pork cubes to the pot and cook until lightly browned on all sides.
Stir in the chopped tomatoes and cook until they soften and release their juices.
Pour in the tomato sauce and pork broth or water. Stir well to combine.
Add the bay leaf, soy sauce, and liver spread (if using). Mix everything together.
Bring the mixture to a simmer and cover the pot. Let the pork cook for about 1 to 1.5 hours or until it becomes tender. Add more broth or water if needed.
Once the pork is tender, add the diced carrots, potatoes, and bell peppers to the pot. Stir well to distribute the vegetables evenly.
Simmer for about 10-15 minutes or until the vegetables are cooked but still retain their texture.
Stir in the green peas and raisins. Continue cooking for another 5 minutes.
Season with salt and pepper to taste. Adjust the seasoning according to your preference.
Remove the bay leaf from the pot before serving.
