Ginisang Ampalaya Recipe.


Ingredients:


2 medium-sized ampalaya (bitter melon)
2 tablespoons cooking oil
3 cloves garlic, minced
1 onion, sliced
2 medium tomatoes, diced
1/4 cup sliced pork or shrimp (optional)
2 eggs, beaten (optional)
1 tablespoon fish sauce (patis)
Salt and pepper, to taste


Recipe Instructions:


Cut the ampalaya in half lengthwise and remove the seeds using a spoon. Slice the ampalaya into thin semi-circles.
Place the sliced ampalaya in a bowl and sprinkle with salt. Gently toss the ampalaya with salt and let it sit for about 10-15 minutes. This step helps to reduce the bitterness of the vegetable.
After 10-15 minutes, rinse the ampalaya thoroughly with water to remove the excess salt. Squeeze out any excess water and set the ampalaya aside.
Heat cooking oil in a large pan or wok over medium heat.
Sauté minced garlic until fragrant and golden.
Add the sliced onions and cook until they become translucent.
If using, add the sliced pork or shrimp to the pan and cook until they are cooked through.
Add the diced tomatoes to the pan and cook until they soften and release their juices.
Add the ampalaya slices to the pan and stir-fry for about 5-7 minutes until they are cooked but still retain their texture. Be mindful not to overcook the ampalaya, as it can become mushy.
Season with fish sauce, salt, and pepper. Adjust the seasoning according to your taste preferences.
