3 cups all-purpose flour
2 teaspoons instant yeast
2 teaspoons sugar
1 ½ teaspoons salt
1 cup warm water (around 110°F/43°C)
2 tablespoons olive oil
Activate the yeast:
In a small bowl, combine warm water, sugar, and yeast. Stir until the sugar and yeast are dissolved.
Let it sit for about 5-10 minutes until the mixture becomes foamy. This indicates that the yeast is activated.
Prepare the dough:
In a large mixing bowl, combine the all-purpose flour and salt.
Make a well in the center of the flour mixture and pour in the activated yeast mixture and olive oil.
Stir the ingredients together until they form a shaggy dough.
Knead the dough:
Transfer the dough to a well-floured surface.
Knead the dough for about 8-10 minutes until it becomes smooth and elastic.
First rise:
Lightly oil a large bowl and place the kneaded dough into it, turning it around to coat it with oil.
Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm, draft-free place for about 1-2 hours until it doubles in size.
Shape and divide the dough:
Once the dough has risen, gently punch it down to release any air bubbles.
Transfer the dough to a floured surface and divide it into 8 equal portions.
Shape each portion into a ball by pulling the edges underneath and rolling it against the surface.
Second rise:
Place the shaped dough balls onto a baking sheet lined with parchment paper.
Cover the dough balls with a kitchen towel and let them rise for another 30-60 minutes until they puff up and become slightly flattened.
Preheat and bake:
Preheat your oven to 475°F (245°C) or the highest temperature your oven can reach during the last 10 minutes of the second rise.
Once the dough balls have risen, gently flatten each ball into a round disc using your hands or a rolling pin.
Place a few discs at a time directly on a baking stone or on a baking sheet if you don't have a stone.
Bake the pita bread for 5-7 minutes or until they puff up and turn lightly golden brown.
Remove the baked pita bread from the oven and transfer them to a cooling rack.
Repeat and serve:
Repeat the baking process with the remaining dough discs.
