4 cups bread flour
¼ cup granulated sugar
2 teaspoons instant yeast
1 teaspoon salt
½ cup unsalted butter, melted and cooled
1 cup pineapple juice, room temperature
½ cup milk, room temperature
3 large eggs
1 teaspoon vanilla extract
Prepare the dough:
In a large mixing bowl, combine the bread flour, sugar, instant yeast, and salt.
In a separate bowl, whisk together the melted butter, pineapple juice, milk, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until a dough forms.
Knead the dough:
Transfer the dough to a well-floured surface.
Knead the dough for about 8-10 minutes until it becomes smooth and elastic.
First rise:
Lightly oil a large bowl and place the kneaded dough into it, turning it around to coat it with oil.
Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm, draft-free place for about 1-2 hours until it doubles in size.
Shape the dough:
Once the dough has risen, gently punch it down to release any air bubbles.
Transfer the dough to a floured surface and divide it into two equal portions.
Second rise:
Take one portion of the dough and shape it into a round or oval loaf.
Place the shaped loaf onto a parchment-lined baking sheet.
Cover the loaf with a kitchen towel and let it rise for another 30-45 minutes until it increases in size.
Preheat and bake:
Preheat your oven to 350°F (175°C) during the last 10 minutes of the second rise.
Repeat the shaping and rising process with the second portion of the dough.
Place the baking sheets with the loaves in the preheated oven.
Bake for 25-30 minutes or until the loaves turn golden brown and sound hollow when tapped on the bottom.
Cool and serve:
Remove the Hawaiian sweet bread from the oven and let it cool on a wire rack before slicing.
