1 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
¼ teaspoon ground cloves
1 cup pumpkin puree
½ cup granulated sugar
½ cup packed brown sugar
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
½ cup chopped nuts (optional)
Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
Mix the dry ingredients:
In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, ground ginger, and ground cloves. Set aside.
Combine the wet ingredients:
In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
Incorporate the dry ingredients:
Gradually add the dry ingredient mixture to the wet ingredients.
Stir until just combined. Be careful not to overmix.
Optional: Add nuts:
If desired, fold in the chopped nuts into the batter until evenly distributed.
Pour the batter:
Pour the batter into the prepared loaf pan, spreading it evenly.
Bake the bread:
Place the loaf pan in the preheated oven and bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
If the top of the bread starts to brown too quickly, you can cover it with foil for the remaining baking time.
Cool and serve:
Remove the pumpkin spice bread from the oven and let it cool in the pan for 10 minutes.
Transfer the bread to a wire rack and allow it to cool completely before slicing.
