Egg Fried Rice Recipe.


Ingredients:


2 cups cooked rice
2 eggs, lightly beaten
2 tablespoons vegetable oil
1/2 cup diced carrots
1/2 cup frozen peas
2 green onions, chopped
2 tablespoons soy sauce
Salt and pepper to taste


Recipe Instructions:


Heat oil in a wok or large skillet over medium heat. Add carrots and peas; stir-fry for 2-3 minutes until tender.
Push the vegetables to one side and pour the beaten eggs into the other side of the pan. Scramble the eggs until cooked.
Add cooked rice to the pan and stir-fry for 2-3 minutes, breaking up any clumps.
Add soy sauce, green onions, salt, and pepper. Stir well to combine all the ingredients.
Cook for an additional 1-2 minutes, until the rice is heated through. Serve hot.
