Mapo Tofu Recipe.


Ingredients:


1 block (14 oz) firm tofu, cubed
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons fermented black beans, rinsed and minced
2 tablespoons doubanjiang (spicy bean paste)
1 tablespoon soy sauce
1 cup chicken or vegetable broth
1 teaspoon cornstarch, dissolved in 1 tablespoon water
2 green onions, chopped
1 teaspoon Szechuan peppercorns, toasted and ground (optional)
Salt to taste


Recipe Instructions:


Heat oil in a wok or large skillet over medium heat. Add garlic, ginger, fermented black beans, and doubanjiang. Stir-fry for 1-2 minutes until fragrant.
Add tofu cubes to the wok and gently stir to coat with the sauce. Be careful not to break the tofu.
Pour in the broth and bring to a simmer. Allow the tofu to cook in the sauce for about 5 minutes.
Stir in the cornstarch mixture and cook for an additional 1-2 minutes until the sauce thickens.
Season with soy sauce and salt according to taste. Stir in the green onions and remove from heat.
Sprinkle with ground Szechuan peppercorns (optional) and serve hot with steamed rice.
