Cashew Cream Cheese Recipe.


Ingredients:


1 1/2 Cups Raw Cashews (Halved and Soaked Overnight)
4 TBSP Apple Cider Vinegar
2 TBSP Fresh Lemon Juice
3 TBSP Water
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


Line a small sieve with cheese cloth and place over a small glass bowl, set aside.
In the bowl of a food processor, add the soaked cashews, apple cider vinegar, lemon juice and water and blend until smooth and creamy.
Transfer the cashew mixture to the cheesecloth covered sieve and smooth out the top of the cashew cheese, fold over the side of the cheesecloth and allow to sit for 2-3 hours.
Discard the liquid that has drained into the glass bowl, allow the cashew cheese to sit on the counter for another hour (still wrapped in the cheesecloth).
After an hour, place the cashew cream cheese into the refrigerator overnight to allow more water to drain and for it to firm up.
Unwrap the cheesecloth, place the cashew cream cheese on a plate and enjoy.
