1 lb pork loin, cut into bite-sized pieces
1/2 cup pineapple chunks (fresh or canned)
1/2 cup bell peppers (red and green), cut into chunks
1/2 cup onion, cut into chunks
2 cloves garlic, minced
2 tablespoons vegetable oil
3 tablespoons ketchup
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch, dissolved in 2 tablespoons water
Salt and pepper to taste
Sesame seeds (optional, for garnish)
Sliced green onions (optional, for garnish)
In a bowl, combine ketchup, rice vinegar, soy sauce, brown sugar, and a pinch of salt. Stir well to make the sweet and sour sauce. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the pork pieces and season with salt and pepper. Stir-fry until the pork is browned and cooked through. Remove the pork from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant. Add the onion and bell peppers, and stir-fry for an additional 2-3 minutes until slightly tender.
Return the cooked pork to the skillet, along with the pineapple chunks. Stir well to combine.
Pour the sweet and sour sauce over the pork and vegetables. Stir-fry for a few minutes until the sauce thickens and coats the ingredients evenly.
Stir in the dissolved cornstarch mixture to further thicken the sauce. Cook for an additional minute.
Remove from heat and garnish with sesame seeds and sliced green onions, if desired.
