1 lb large shrimp, peeled and deveined
1/2 cup unsalted peanuts
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup diced onions
2 cloves garlic, minced
2 tablespoons vegetable oil
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon hoisin sauce
1 tablespoon sugar
1 teaspoon cornstarch
1 teaspoon chili flakes (adjust according to your spice preference)
Green onions, sliced (for garnish)
In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sugar, cornstarch, and chili flakes. Set aside.
Heat oil in a wok or large skillet over high heat. Add shrimp and stir-fry until they turn pink and are cooked through. Remove the shrimp from the pan and set aside.
In the same pan, add garlic, peanuts, bell peppers, and onions. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
Return the cooked shrimp to the pan and stir to combine with the vegetables.
Pour the sauce mixture over the shrimp and vegetables. Stir well to coat everything evenly.
Continue cooking for 1-2 minutes until the sauce thickens and coats the shrimp and vegetables.
Remove from heat and garnish with sliced green onions.
