Peking Duck Recipe.


Ingredients:


1 whole duck (around 5-6 pounds)
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 teaspoon Chinese five-spice powder
1 teaspoon salt
1 teaspoon baking powder
6-8 cups hot water (for boiling)
Pancakes or steamed buns, cucumber slices, and scallions (for serving)


Recipe Instructions:


Preparing the Duck:

Start by cleaning the duck thoroughly, removing any excess fat and innards. Rinse it under cold water and pat it dry with paper towels.
In a small bowl, mix together honey, soy sauce, hoisin sauce, rice vinegar, Chinese five-spice powder, and salt to make the marinade.
Rub the marinade all over the duck, both inside and outside. Ensure it is evenly coated. Let the duck marinate for at least 2 hours or overnight in the refrigerator.

Roasting the Duck:

Preheat the oven to 350°F (175°C).
Place the marinated duck on a wire rack set inside a roasting pan, breast side up.
In a separate bowl, mix baking powder with 2 tablespoons of water. Brush this mixture evenly over the skin of the duck. This helps achieve a crispy skin.
Roast the duck in the preheated oven for about 2 hours or until the skin turns golden brown and crispy. Rotate the duck halfway through cooking for even browning.
Once cooked, remove the duck from the oven and let it rest for 10-15 minutes before carving.

Carving and Serving:

To carve the Peking duck, start by removing the legs and wings. Then, separate the breast from the carcass. Slice the breast meat into thin pieces.
Serve the Peking duck with warm pancakes or steamed buns, cucumber slices, and scallions.
