Spring Rolls Recipe.


Ingredients:


8-10 spring roll wrappers
1 cup finely shredded cabbage
1 cup julienned carrots
1 cup bean sprouts
1/2 cup thinly sliced bell peppers (red and green)
1/2 cup sliced mushrooms
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 tablespoon sesame oil
1 tablespoon vegetable oil (for cooking)
1 tablespoon cornstarch, dissolved in 2 tablespoons water
Vegetable oil (for frying)
Sweet chili sauce or dipping sauce of your choice (for serving)


Recipe Instructions:


In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and stir-fry for about 1 minute until fragrant.

Add shredded cabbage, julienned carrots, bean sprouts, sliced bell peppers, and sliced mushrooms to the skillet. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.

In a small bowl, whisk together soy sauce, oyster sauce (if using), sesame oil, and cornstarch mixture. Pour this sauce mixture into the skillet with the stir-fried vegetables. Stir well to coat the vegetables evenly. Cook for an additional 1-2 minutes until the sauce thickens slightly.

Remove the skillet from heat and let the filling cool down to room temperature.

Take a spring roll wrapper and place it on a clean surface or cutting board. Spoon about 2 tablespoons of the vegetable filling onto the bottom third of the wrapper.

Fold the bottom edge of the wrapper over the filling, then fold the sides inward, and roll tightly to form a neat cylinder. Seal the top edge with a dab of water to secure the spring roll. Repeat this process for the remaining wrappers and filling.

Heat vegetable oil in a deep pot or a wok over medium-high heat for frying. Make sure there is enough oil to fully submerge the spring rolls.

Carefully add the spring rolls to the hot oil, a few at a time, and fry until they turn golden brown and crispy. This should take about 3-4 minutes per batch.

Use a slotted spoon or tongs to remove the fried spring rolls from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve the spring rolls hot with sweet chili sauce or your favorite dipping sauce.
