Spaghetti alla Puttanesca Recipe.


Ingredients:


12 ounces (340g) spaghetti
3 tablespoons (45ml) olive oil
4 cloves of garlic, minced
4 anchovy fillets, chopped
1 can (14 ounces/400g) diced tomatoes
½ cup (75g) pitted Kalamata olives, halved
2 tablespoons (30g) capers, drained
½ teaspoon dried red pepper flakes (adjust to taste)
Salt and black pepper to taste
Fresh parsley for garnish
Grated Parmesan cheese for serving (optional)


Recipe Instructions:


Cook the spaghetti in a large pot of salted boiling water until al dente according to the package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped anchovy fillets to the skillet. Sauté for about 2 minutes until the garlic becomes fragrant and the anchovies start to dissolve.
Add the diced tomatoes, Kalamata olives, capers, and dried red pepper flakes to the skillet. Stir well to combine. Simmer the sauce for about 10 minutes to allow the flavors to meld together. Season with salt and black pepper to taste.
Add the cooked spaghetti to the skillet with the sauce. Toss well to coat the spaghetti evenly with the puttanesca sauce.
Remove the skillet from heat and garnish the spaghetti alla puttanesca with fresh parsley.
Serve the pasta hot, optionally topped with grated Parmesan cheese if desired.
