Panzanella Recipe.


Ingredients:


4 cups (200g) day-old crusty bread, cut into cubes
4 large ripe tomatoes, diced
1 cucumber, diced
1 small red onion, thinly sliced
½ cup (75g) Kalamata olives, pitted and halved
½ cup (25g) fresh basil leaves, torn
¼ cup (60ml) extra-virgin olive oil
2 tablespoons (30ml) red wine vinegar
Salt and black pepper to taste


Recipe Instructions:


In a large mixing bowl, combine the bread cubes, diced tomatoes, cucumber, red onion, Kalamata olives, and torn basil leaves.
Drizzle the extra-virgin olive oil and red wine vinegar over the ingredients in the bowl.
Season with salt and black pepper to taste.
Gently toss the mixture to combine, ensuring the bread cubes absorb the dressing and the flavors meld together.
Let the Panzanella sit for about 10-15 minutes at room temperature to allow the flavors to develop and the bread to soften slightly.
Serve the Panzanella salad as a refreshing and vibrant side dish or light lunch option.
