Gelato Recipe.


Ingredients:


2 cups (480ml) whole milk
1 cup (240ml) heavy cream
¾ cup (150g) granulated sugar
4 large egg yolks
2 teaspoons (10ml) vanilla extract
Desired flavorings (e.g., chocolate, fruit puree, coffee, nuts)


Recipe Instructions:


In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until it reaches a gentle simmer. Do not let it boil.
In a separate bowl, whisk together the granulated sugar and egg yolks until well combined and creamy.
Slowly pour about half of the hot milk mixture into the egg mixture, whisking constantly. This helps to temper the eggs and prevent them from scrambling.
Pour the egg and milk mixture back into the saucepan with the remaining milk mixture, whisking constantly.
Cook the mixture over medium heat, stirring constantly with a wooden spoon or spatula, until it thickens and coats the back of the spoon. This should take about 5-7 minutes. Do not let it boil.
Remove the saucepan from heat and stir in the vanilla extract.
Let the mixture cool to room temperature, then cover it with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to develop and the mixture to chill thoroughly.
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions.
During the last few minutes of churning, add your desired flavorings, such as melted chocolate, fruit puree, coffee extract, or chopped nuts. Stir them into the gelato until well incorporated.
Transfer the churned gelato to an airtight container and freeze for an additional 2-4 hours, or until firm.
Serve the gelato chilled in bowls or cones.
