Red Velvet Cheesecake Recipe.


Ingredients:


For the crust:

2 cups chocolate cookie crumbs
1/4 cup melted butter

For the red velvet cheesecake filling:

3 cups cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 tbsp unsweetened cocoa powder
2 tbsp red food coloring
3 large eggs

For the cream cheese frosting:

1 cup cream cheese, softened
1/2 cup powdered sugar
1/2 tsp vanilla extract


Recipe Instructions:


Preheat your oven to 325°F (160°C).
In a bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a greased springform pan to form the crust.
In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy.
Add cocoa powder and red food coloring to the cream cheese mixture. Mix until well combined and the color is evenly distributed.
Add the eggs, one at a time, beating well after each addition.
Pour the red velvet cream cheese mixture over the crust in the springform pan, spreading it evenly.
Bake for 55-60 minutes until the center is set and the top is lightly golden.
Remove from the oven and let it cool completely before refrigerating for at least 4 hours or overnight.
While the cheesecake is chilling, prepare the cream cheese frosting.
In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Once the cheesecake has chilled, remove it from the pan, slice, and serve with a dollop of cream cheese frosting on top.
