Pumpkin Spice Cheesecake Recipe.


Ingredients:


For the crust:

2 cups graham cracker crumbs
1/4 cup melted butter

For the pumpkin spice cheesecake filling:

3 cups cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
1 cup canned pumpkin puree
1 tsp pumpkin spice mix
4 large eggs

For the whipped cream topping:

1 cup heavy cream
2 tbsp powdered sugar
1/2 tsp vanilla extract
Additional pumpkin spice mix for garnish (optional)


Recipe Instructions:


Preheat your oven to 325°F (160°C).
In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased springform pan to form the crust.
In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy.
Add pumpkin puree and pumpkin spice mix to the cream cheese mixture. Mix until well combined.
Add the eggs, one at a time, beating well after each addition.
Pour the pumpkin spice cream cheese mixture over the crust in the springform pan, spreading it evenly.
Bake for 55-60 minutes until the center is set and the top is lightly golden.
Remove from the oven and let it cool completely before refrigerating for at least 4 hours or overnight.
While the cheesecake is chilling, prepare the whipped cream topping.
In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Once the cheesecake has chilled, remove it from the pan, slice, and serve with a dollop of whipped cream on top.
Sprinkle with additional pumpkin spice mix for garnish, if desired.
