For the crust:
2 cups graham cracker crumbs
1/4 cup melted butter
For the cheesecake filling:
3 cups cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
For the chocolate ganache:
1 cup chocolate chips
1/2 cup heavy cream
For the marshmallow topping:
2 cups mini marshmallows
For the graham cracker crumble:
1 cup graham cracker crumbs
2 tbsp melted butter
Preheat your oven to 325°F (160°C).
In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased springform pan to form the crust.
In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy.
Add the eggs, one at a time, beating well after each addition.
Pour the cream cheese mixture over the crust in the springform pan, spreading it evenly.
Bake for 55-60 minutes until the center is set and the top is lightly golden.
Remove from the oven and let it cool completely.
While the cheesecake is cooling, prepare the chocolate ganache. In a microwave-safe bowl, heat the chocolate chips and heavy cream in 30-second intervals, stirring until smooth. Let it cool slightly.
Pour the chocolate ganache over the cooled cheesecake and spread it evenly.
Sprinkle the mini marshmallows on top of the ganache, covering the surface.
In a separate bowl, combine graham cracker crumbs and melted butter to make the graham cracker crumble. Sprinkle the crumble around the edges of the cheesecake.
Preheat your oven's broiler. Place the cheesecake with the marshmallows under the broiler for 1-2 minutes, or until the marshmallows are golden brown. Keep a close eye on it to avoid burning.
Remove from the oven and let it cool completely before refrigerating for at least 4 hours or overnight.
Once chilled, remove the cheesecake from the pan, slice, and serve the delicious S'mores Cheesecake.
