For the crust:
2 cups graham cracker crumbs
1/4 cup melted butter
For the matcha green tea cheesecake filling:
3 cups cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 tbsp matcha green tea powder
4 large eggs
For the matcha whipped cream:
1 cup heavy cream
2 tbsp powdered sugar
1 tsp matcha green tea powder
For garnish (optional):
Matcha powder for dusting
White chocolate shavings
Preheat your oven to 325°F (160°C).
In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased springform pan to form the crust.
In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy.
Add matcha green tea powder to the cream cheese mixture. Mix until well combined and the color is evenly distributed.
Add the eggs, one at a time, beating well after each addition.
Pour the matcha-flavored cream cheese mixture over the crust in the springform pan, spreading it evenly.
Bake for 55-60 minutes until the center is set and the top is lightly golden.
Remove from the oven and let it cool completely before refrigerating for at least 4 hours or overnight.
While the cheesecake is chilling, prepare the matcha whipped cream.
In a mixing bowl, beat the heavy cream, powdered sugar, and matcha green tea powder until soft peaks form.
Once the cheesecake has chilled, remove it from the pan, slice, and serve with a dollop of matcha whipped cream on top.
Dust with matcha powder and sprinkle with white chocolate shavings for garnish, if desired.
