2 tablespoons unsalted butter
2 tablespoons all-purpose flour
¾ cup milk
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
2 cups grated Cheddar cheese
Salt and pepper to taste
4-6 slices of bread, toasted
Prepare the Cheese Sauce:
In a saucepan, melt the butter over medium heat.
Add the flour to the melted butter and whisk until smooth, creating a roux.
Cook the roux for about 1-2 minutes, stirring constantly.
Gradually add the milk to the pan, whisking continuously to prevent lumps from forming.
Continue to cook and whisk the mixture until it thickens and comes to a gentle simmer.
Stir in the Dijon mustard and Worcestershire sauce.
Reduce the heat to low and gradually add the grated Cheddar cheese to the sauce, stirring until the cheese is fully melted and the sauce is smooth and creamy.
Season the sauce with salt and pepper to taste.
Toast the Bread:
Toast the slices of bread until golden brown and crispy.
Prepare the Welsh Rarebit:
Preheat your broiler to high.
Arrange the toasted bread slices on a baking sheet.
Spoon a generous amount of the cheese sauce over each slice, ensuring they are evenly coated.
Place the baking sheet under the broiler and cook for about 2-3 minutes, or until the cheese sauce is bubbling and slightly golden on top.
Serve and Enjoy:
Remove the Welsh Rarebit from the broiler and let it cool for a few minutes.
Transfer the slices to serving plates or a platter.
Serve the Welsh Rarebit immediately.
