2 tablespoons unsalted butter
1 onion, chopped
2 cloves of garlic, minced
1 head of broccoli, florets separated
3 cups vegetable or chicken broth
1 cup milk
4 ounces Stilton cheese, crumbled
Salt and pepper to taste
Fresh chives or parsley, chopped (for garnish)
Sauté the Onion and Garlic:
In a large pot, melt the butter over medium heat.
Add the chopped onion and minced garlic to the pot and sauté until the onion becomes translucent and slightly caramelized.
Add the Broccoli:
Add the broccoli florets to the pot and stir them with the onion and garlic.
Cook for a few minutes until the broccoli begins to soften slightly.
Cook the Soup:
Pour the vegetable or chicken broth into the pot and bring it to a boil.
Reduce the heat to a simmer and let the soup cook for about 10-15 minutes, or until the broccoli is tender.
Blend the Soup:
Using an immersion blender or regular blender, puree the soup until smooth and creamy.
If using a regular blender, work in batches and be careful when blending hot liquids.
Add the Milk and Stilton:
Return the soup to the pot and pour in the milk.
Add the crumbled Stilton cheese to the pot, reserving a small amount for garnish.
Stir the soup gently until the cheese has melted and is fully incorporated.
Season the soup with salt and pepper to taste.
Serve and Garnish:
Ladle the Stilton and Broccoli Soup into bowls.
Sprinkle the reserved crumbled Stilton cheese on top.
Garnish with freshly chopped chives or parsley.
