1 pound fresh strawberries, hulled and quartered
1 tablespoon granulated sugar (optional, depending on the sweetness of the strawberries)
1 ½ cups heavy cream
3 tablespoons powdered sugar
1 teaspoon vanilla extract
4-6 store-bought meringue nests, roughly crushed
Prepare the Strawberries:
In a bowl, combine the fresh strawberries and granulated sugar (if needed) and gently toss them together.
Let the strawberries sit for about 10-15 minutes to release their juices and develop flavor.
Whip the Cream:
In a separate bowl, pour the heavy cream, powdered sugar, and vanilla extract.
Using an electric mixer or whisk, beat the cream until it forms soft peaks. Be careful not to over-whip, as it may turn into butter.
Assemble the Eton Mess:
In serving glasses or bowls, layer the crushed meringue, whipped cream, and strawberries.
Repeat the layers until you reach the desired amount, finishing with a dollop of whipped cream and a few strawberry quarters on top.
