Scrambled eggs with spinach and feta cheese. Recipe.


Ingredients:


3 large eggs
1 cup fresh spinach leaves, washed and chopped
1/4 cup crumbled feta cheese
Salt and pepper to taste
1 tablespoon olive oil or butter (for cooking)


Recipe Instructions:


Crack the eggs into a mixing bowl. Beat the eggs lightly with a fork or whisk until the yolks and whites are well combined. Season the beaten eggs with a pinch of salt and pepper according to your taste.
Heat the olive oil or butter in a non-stick skillet over medium heat. Once the oil is hot or the butter is melted and bubbly, add the chopped spinach to the skillet.
Cook the spinach for about 1-2 minutes, stirring occasionally, until it begins to wilt and becomes tender.
Pour the beaten eggs over the sautéed spinach in the skillet. Allow the eggs to sit for a few seconds until they start to set around the edges.
Using a spatula, gently stir and scramble the eggs and spinach mixture in the skillet. Continue to cook and stir occasionally until the eggs are cooked through but still slightly moist, about 2-3 minutes.
Once the eggs are almost cooked to your desired consistency, sprinkle the crumbled feta cheese evenly over the top of the scrambled eggs.
Continue cooking for another 1-2 minutes, or until the feta cheese begins to melt slightly and the eggs are fully cooked. Be careful not to overcook the eggs to maintain their creamy texture.
Once the scrambled eggs are cooked to perfection, transfer them to a plate and serve hot. You can garnish with additional salt, pepper, or herbs if desired.
