4 Cups Cauliflower Rice
1 Cup Mushrooms (Sliced)
1 TBSP Fresh Thyme (Chopped)
1 TBSP Fresh Oregano (Chopped)
1 Shallot (Diced)
2 Cloves Garlic (Minced)
1 TBSP Butter
1 TBSP Olive Oil
1 TBSP Lemon Juice
Pinch of Salt
Pinch of Ground Black Pepper
In a large non-stick skillet over medium-high heat, melt the butter and half a TSP of olive oil.
Add 1/2 TBSP of oregano, 1/2 TBSP thyme, shallots, minced garlic, salt and pepper and cook for 1-2 minutes until fragrant.
Add the mushrooms and cauliflower rice and cook for another 5-6 minutes or until the cauliflower rice begins to get tender.
Squeeze lemon juice over the cauliflower rice, stir, remove skillet from heat and place cauliflower rice on a serving platter or divide between plates to serve while hot.
