2 ripe avocados, peeled and sliced into wedges
1 cup breadcrumbs
½ teaspoon garlic powder
½ teaspoon smoked paprika
Salt and pepper to taste
2 eggs, beaten
Cooking spray
For Chipotle Dipping Sauce:
½ cup mayonnaise (or vegan mayonnaise)
1 tablespoon chipotle peppers in adobo sauce, minced
1 tablespoon lime juice
Salt to taste
Preheat your air fryer to 375°F (190°C).
In a shallow bowl, mix breadcrumbs, garlic powder, smoked paprika, salt, and pepper.
Dip each avocado wedge into the beaten eggs, then coat evenly with the breadcrumb mixture.
Place the coated avocado wedges in a single layer in the air fryer basket.
Lightly spray the avocado fries with cooking spray.
Air fry for 8-10 minutes, flipping halfway through, until the fries are golden and crispy.
While the avocado fries are cooking, prepare the chipotle dipping sauce by combining mayonnaise, minced chipotle peppers, lime juice, and salt in a small bowl.
Serve the crispy avocado fries hot with the chipotle dipping sauce on the side.
