4 large portobello mushrooms
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup baby spinach, chopped
½ cup breadcrumbs
¼ cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Preheat your air fryer to 375°F (190°C).
Remove the stems from the portobello mushrooms and gently scrape out the gills using a spoon.
In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
Add chopped spinach to the skillet and cook until wilted. Remove from heat.
In a bowl, combine sautéed spinach mixture with breadcrumbs, grated Parmesan cheese, salt, and pepper.
Stuff each portobello mushroom cap with the spinach mixture.
Place the stuffed mushrooms in the air fryer basket, stuffed side up.
Air fry for 12-15 minutes, until the mushrooms are tender and the filling is golden brown.
Garnish with chopped fresh parsley before serving.
