1 large eggplant, sliced into rounds
Salt
1 cup breadcrumbs
½ cup grated Parmesan cheese
2 eggs, beaten
1 cup marinara sauce
1 cup shredded mozzarella cheese
Fresh basil leaves (for garnish)
Place eggplant slices in a colander and sprinkle with salt. Let sit for 15-20 minutes to draw out excess moisture.
Pat the eggplant slices dry with paper towels.
In a shallow bowl, mix breadcrumbs and grated Parmesan cheese.
Dip each eggplant slice into beaten eggs, then coat evenly with the breadcrumb mixture.
Preheat your air fryer to 375°F (190°C).
Place the coated eggplant slices in the air fryer basket in a single layer.
Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.
Top each crispy eggplant slice with marinara sauce and shredded mozzarella cheese.
Air fry for an additional 3-5 minutes, until the cheese is melted and bubbly.
Garnish with fresh basil leaves before serving.
