2 medium zucchinis
1 cup cooked quinoa
½ cup cherry tomatoes, halved
½ cup diced cucumber
¼ cup chopped Kalamata olives
¼ cup crumbled feta cheese
2 tablespoons chopped fresh parsley
1 tablespoon olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Preheat your air fryer to 375°F (190°C).
Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
In a bowl, mix cooked quinoa, cherry tomatoes, diced cucumber, chopped Kalamata olives, crumbled feta cheese, chopped fresh parsley, olive oil, lemon juice, salt, and pepper.
Stuff each zucchini boat with the quinoa mixture, pressing down gently to pack it in.
Place the stuffed zucchini boats in the air fryer basket.
Air fry for 15-20 minutes, until the zucchini is tender and the filling is heated through.
Serve hot, optionally garnished with additional chopped parsley.
