Black Pudding Scotch Eggs Recipe.


Ingredients:


6 eggs, plus 1 beaten for coating
300g black pudding, skin removed and mashed
200g sausage meat
100g flour, seasoned with salt and pepper
100g breadcrumbs
Vegetable oil, for deep frying


Recipe Instructions:


Boil 6 eggs to your liking (soft-boiled for a runny yolk), cool under cold water, then peel.
Mix black pudding and sausage meat together.
Divide the meat mixture into 6 portions and flatten each into an oval shape.
Wrap each egg in meat, ensuring it is fully enclosed.
Dip each in flour, then beaten egg, then breadcrumbs.
Heat oil to 170°C (340°F) and deep fry the eggs until golden, about 4 minutes.
Drain on paper towels and serve warm or at room temperature.
