200g black pudding, crumbled
2 large potatoes, diced and parboiled
1 onion, diced
2 cloves garlic, minced
1 tsp smoked paprika
4 eggs
Salt and pepper, to taste
Olive oil
Heat oil in a large skillet over medium heat.
Add onion and garlic, sauté until translucent.
Add potatoes, cook until they start to crisp.
Stir in the black pudding and paprika, cook for a few minutes until heated through.
Make wells in the hash and crack an egg into each.
Cover and cook until eggs are set.
Season with salt and pepper, and serve.
