200g black pudding, sliced
1 can (400g) chopped tomatoes
1 onion, chopped
1 red bell pepper, diced
2 cloves garlic, minced
4 eggs
1 tsp smoked paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Olive oil
Preheat oven to 180°C (350°F).
In a skillet, heat oil over medium. Add onion, bell pepper, and garlic. Cook until soft.
Add chopped tomatoes and paprika. Simmer for 10 minutes.
Add black pudding slices and stir gently.
Transfer mixture to a baking dish. Make four wells and crack an egg into each.
Bake in the oven for 10-15 minutes, until eggs are set.
Garnish with chopped parsley and serve.
