200g black pudding, sliced and pan-fried
1 cup Arborio rice
1 onion, finely chopped
2 cloves garlic, minced
1/2 cup white wine
3-4 cups chicken or vegetable broth, kept warm
50g Parmesan cheese, grated
2 tbsp butter
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
In a large pan, melt butter over medium heat.
Add onion and garlic, sauté until translucent.
Add rice, stirring to coat with butter.
Pour in wine and cook until absorbed.
Add broth, one ladle at a time, stirring constantly until each ladle is absorbed before adding the next.
When rice is tender and creamy, stir in the fried black pudding and Parmesan.
Season with salt and pepper.
Serve garnished with parsley.
