200g black pudding, sliced
1 can (400g) chickpeas, drained and rinsed
1 onion, chopped
2 cloves garlic, minced
1 can (400g) diced tomatoes
1 tsp smoked paprika
Salt and pepper, to taste
Olive oil
Fresh parsley, chopped (for garnish)
In a large pot, heat oil over medium heat.
Add onion and garlic, sauté until soft.
Add smoked paprika, diced tomatoes, and chickpeas.
Simmer for 10 minutes, then add black pudding slices.
Cook for another 5-10 minutes until the stew is thickened.
Season with salt and pepper.
Serve hot, garnished with parsley.
