3 eggs
100g black pudding, crumbled
1 tomato, chopped
1 small onion, finely chopped
Salt and pepper, to taste
Butter or oil, for cooking
Beat the eggs in a bowl. Season with salt and pepper.
Heat butter or oil in a non-stick frying pan over medium heat.
Sauté the onion until translucent, then add tomato and black pudding.
Pour in the eggs and cook, stirring gently until the eggs are set but still soft.
Fold the omelette in half and slide onto a plate.
Serve hot.
