2 Eggs (Beaten)
1 TBSP Nut Butter
2 Cups Swiss Chard (Ripped)
1/2 TSP Sunflower Seeds
1 Clove Garlic (Minced)
Pinch of Ground Black Pepper
In a non-stick skillet over medium heat, add the nut butter, minced garlic and chard and cook for 3 minutes until the chard begins to wilt and the garlic becomes aromatic.
Pour the beaten eggs into the skillet and mix to combine with the chard.
Season with ground black pepper, add the sunflower seeds and continue to cook for 2-3 minutes until omelet is at required doneness.
Serve hot.
