Cheesesteak Zucchini Boats Recipe.


Ingredients:


4 Zucchini (Halved Lengthways)
1/4 Cup Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper
1 Onion (Roughly Chopped)
2 Bell Peppers (Thinly Sliced)
2 Clove's of Garlic (Finely Minced)
1 LB Sirloin Steak (Thinly Sliced)
1 TSP Dried Oregano
2 Cups Provolone Cheese (Shredded)
2 TSP Fresh Parsley (Chopped)


Recipe Instructions:


Preheat oven to 350 degrees and coat a baking dish with a little coconut cooking spray, set aside.
Remove the flesh of the zucchinis from each half and set aside in a container.
Transfer the zucchini halves to the prepared baking dish and brush each half with a little olive oil, season with salt and pepper and bake for 10-15 minutes until just turning tender.
While the zucchini halves bake, heat a little olive oil in a large non-stick skillet over medium heat.
Add the onions, bell peppers and scooped out zucchini flesh.
Season with salt and ground black pepper and cook, stirring often for 8 minutes.
Remove from the heat, place into a glass bowl and set aside.
Increase the heat to medium-high and add remaining olive oil into the pan and add the steak strips in a single layer, season with salt, pepper and oregano and cook until seared all over, remove from the heat.
Fill the zucchini halves with steak, cooked vegetable mixture, top with a sprinkling of provolone cheese and bake for 10 minutes until the cheese has turned golden brown, melted and is bubbly.
Serve hot.
