Chicken And Zucchini Stir Fry Recipe.


Ingredients:


1/4 Cup Soy Sauce (Low Sodium)
1 Cup Chicken Broth
2 TSP Cornstarch
2 TBSP Mirin
1 TBSP Swerve
2 TSP Sesame Oil
1 TBSP Canola Oil
1 TBSP Garlic (Minced)
2" Fresh Ginger (Minced)
1 LB Chicken Breast (Thinly Sliced)
2 Cups Zucchini (Sliced)


Recipe Instructions:


In a large glass bowl, combine the soy sauce, chicken broth, cornstarch, mirin, sugar and sesame oil and whisk until everything is dissolved completely.
Take a large skillet and over medium-high heat, add one TSP of canola oil and cook the chicken, you may need to do this in 2 batches.
Should take roughly 3-4 minutes per side.
Remove chicken to a plate once cooked through.
Add the remaining 1 TSP of oil, the garlic and ginger to the same skillet and cook for 1 minute until fragrant but not browned.
Stir the garlic and ginger and add in the sauce, whisking well, cook for 1-2 minutes until the sauce begins to thicken.
Add the zucchini and cook for another 2-3 minutes until thickened and zucchini begins to crisp up.
Remove pan from the heat and add the cooked chicken, stir well to combine, serve immediately.
