Chicken Burrito Recipe.


Ingredients:


1/2 Cup Pre-Cooked Brown Rice
1/2 Cup Chicken Breast (Diced)
2 TSP Fajita Seasoning
4 Large Whole-wheat Tortillas
1/2 Cup Reduced Fat Cheese (Grated)
1/2 Cup Sweet Corn (Drained)
1 Cup Napa Cabbage (Shredded)
2 Tomatoes (Chopped)
1 Cup Greek Low-Fat Yogurt


Recipe Instructions:


In a non-stick skillet over medium-high heat, cook the diced chicken until browned and tender.
In a medium glass bowl, add the rice, cooked chicken, sweet corn and spices and mix thoroughly.
Lay a tortilla on a clean countertop or large cutting board and top with some of the rice mixture, shredded cheese, cabbage and diced tomatoes.
Pull one side of the wrap towards the center over the filling, repeat with the other side then while pulling tight, fold over the other two ends and roll the burrito into a log shape.
Place the burrito in a piece of aluminum foil and wrap it that same way as you did the tortilla.
Place the wrap in a sandwich press, lower the top and heat for 3-5 minutes.
Serve burrito wrap with Greek yogurt.
