Chicken Fettucine Alfredo Recipe.


Ingredients:


1 (12 Oz) Pack of Fettucine (Uncooked)
2 TBSP Butter (Unsalted)
2 Chicken Breasts (Boneless, Skinless, Cut into 1" Pieces)
1/2 TSP Salt
1/2 TSP Ground Black Pepper
8 TBSP Butter (Unsalted)
2 Cups Ricotta Cheese
1 Cup Heavy Cream
2/3 Cup Parmesan Cheese (Grated)


Recipe Instructions:


Cook pasta according to package directions.
In a large saucepan, melt the 2 TBSP of butter over a medium-high heat.
Season the chicken with salt and pepper then add to the saucepan.
Cook chicken until lightly golden brown and cooked through, about 8 minutes.
Remove the chicken from the pan and set aside.
In the same pan, melt 8 TBSP of butter then add in the ricotta cheese, heavy cream, parmesan cheese and stir continually to combine, bring mixture to a boil.
Once mixture begins to boil, reduce the heat to a simmer and cook for 5 minutes stirring occasionally.
Taste the sauce and season with salt and pepper if required.
Add the chicken and cooked fettucine to the saucepan and toss everything to coat with the sauce evenly.
Continue cooking until everything is heated through and serve.
