1 Cup Shelled Walnuts
5 Cloves Garlic
3 Cups Fresh Basil
2 Cups Spinach or Kale
2/3 Cup Olive Oil
1 1/2 TBSP Lemon Juice
Salt & Pepper to Taste
3 Cups Shredded Chicken Breast
4 Medium Sweet Potatoes
Oil for Baking
Preheat oven to 400 degrees.
Coat sweet potatoes with a little oil and sprinkle with salt, place on a baking sheet and put in oven for 60 minutes or until soft.
Combine walnuts, garlic, basil, spinach, olive oil, lemon juice, salt and pepper in a food processor and blitz until a smooth paste form.
In a large bowl, combine pesto and shredded chicken and mix.
Once sweet potatoes are cooked, slice lengthways and top with a generous portion of the chicken pesto mix, return to oven for a further 5 minutes, serve warm.
