Chicken Pesto Mac & Cheese Recipe.


Ingredients:


1 TBSP Olive Oil
1 Boneless Skinless Chicken Breast (Cut into Bite Sized Pieces)
1/4 Cup Butter (Unsalted)
3 TBSP All Purpose Flour
2 Cups Whole Milk
1 1/4 Cups Water
1 1/4 Cups Chicken Stock
2 Cups Elbow Macaroni (Uncooked)
1 Cup Mozzarella Cheese (Shredded)
2 Cups Sharp Cheddar Cheese (Shredded)
Pinch of Ground Black Pepper
1/2 TSP Mustard Powder
1/2 Cup Pesto


Recipe Instructions:


In a deep skillet, over medium high heat, add the olive oil and once it begins to shimmer, add the chicken breast pieces, season with salt and pepper and allow the chicken to sear, turning a nice golden brown color.
Once cooked remove from the skillet and set aside.
In the same skillet, melt the butter over a medium low heat then whisk in the flour and cook for 2-4 minutes.
Slowly add the milk to the butter and flour mixture, whisking constantly until a smooth sauce begins to develop.
When the milk sauce is starting to bubble, add the water, chicken stock, mustard powder and a generous seasoning of pepper.
Pour the uncooked pasta into the sauce, reduce the heat to medium, cover and allow the pasta to cook in the sauce, stirring occasionally, this should take about 10 minutes.
Remove the skillet from the heat, slowly add the cheeses a little at a time, combining slowly while the cheese melts then fold in the pesto sauce and cooked chicken.
Serve immediately.
