1 1/2 LB Boneless Skinless Chicken Thighs
1/4 Cup Fresh Lime Juice
1/4 Cup Olive Oil
3 Cloves of Garlic (Peeled and Chopped)
2 TSP Ground Cumin
1 1/2 TSP Chili Powder
1/4 Cup Fresh Cilantro (Chopped)
Pinch of Ground Black Pepper
Add chicken to a resealable gallon bag.
In a small glass bowl whisk together the lime juice, olive oil, garlic, ground cumin, chili powder, cilantro and pepper.
Once mixture is well combined pour over the chicken in the bag, releasing the air and gently shake the bag to coat the chicken in the marinade.
Put bag in the refrigerator and allow to marinate for 2-4 hours.
Preheat a grill over medium-high heat.
Place chicken thighs on the grill and cook until the internal temperature reaches 165 degrees, roughly 6-8 minutes per side.
Transfer cooked chicken to a plate, cover with aluminum foil and allow to rest for 5 minutes.
Once rested, dice the cooked chicken into cubes and serve over tacos with your choice of toppings.
